
Apple Raisin Cookies
Well remember a few days ago when I said I was having a d(hydrator) day! Well I am finally posting one of my goodies from that day. I only ended up making two things, these cookies and “I Am Grateful” flax crackers (bread). These cookies were more than worth it though! It made me really want to have oatmeal raisin cookies though. I need to find a good recipe for those. I came across the recipe for these cookies in “RAWvolution” by Matt Amsden. Now had I been a good little girl and followed the recipe to a T you wouldn’t have a wonderful recipe to play with would you?
As I have mentioned before, I am no good at sticking to recipe’s. I love recipe books and own quite a few but I find that they are better guides (to follow loosley) than written in stone. I rarely follow recipe’s and I can always eat what I make
(and so can my husband; so unless I’ve killed his taste buds too I am going to go ahead and toot my own horn here; TOOT!). My dogs also love my delectable. They can’t have these cookies because of the rasins but I will give them bits without the raisin in it.
Alright, I know you are waiting for the recipe, so I won’t delay it anymore!
Apple Raisin Cookies
2 pounds Gala Apples (grated)
3/4 – 1 cup agave nectar
2 cups almond flour
1 cup raisins (next time I will use closer to 1 1/2 cups) soaked for 20 minutes
1/4 cup cinnamon
1 tsp nutmeg (or to taste)
Mix ingredients together, form golf ball sized balls and then flatten to about 1/2 inch thick. Put on dehydrator sheets and dehydrate at 105 degrees for 24 hours.
Note: The batter was super yummy too, and I bet this would make an awesome granola if the ratio’s were played around with a little!

Now to address the title of this post. What makes a good cookie? Well for me it is chewie, bursting with flavor and has a couple different textures in it. I was always a huge fan of oatmeal raisin cookies. I liked chocolate chip but only when my grandmother made them; she threw in oats and sometimes nuts, but all my criteria were met! The oats offset the overpowering sweet that you got from the chocolate chips and sugar filled cookie.

I am going to go be naughty now and have a piece of raw pizza (my hubby just got home from his seminar and he’s STARVING) and it looks oh so good! I know I’m not supposed to eat after 7; I try not to eat after 6 but the past couple nights I just can’t seem to help myself…there have just been goodies EVERYWHERE!

These look great.. I cannot tolerate flax the taste or the after effects. ehem.. so I love that this has almond flour, got lots of that around here!
